The installation of the new still in the historic cellars in the Old City is nearly complete.
We have run a test boil on the still, and are pleased to report that all the systems are running perfectly. It was a tense time, firing her up for the first time, but after the control reads started showing distilling temperatures in the vessel we all started to relax a little.
Nothing blew up or caught fire. In fact there was barely even a rattle.
After putting away the various fire fighting equipment we were able to reflect on the text and start planning the first proper run. We will update this post in due course.
UPDATE: First distilling run also went without a hitch. We loaded up the botanical basket with a random assortment of things including rosemary and almond. The resulting distillate came out a little higher in alcohol than predicted, with a pleasing scent and taste from the infusion.
